Apple-y Things

So when I was up at my sister's last weekend (yes, the wedding went well, yes I have a few pictures, yes I'll get around to doing something with them soonish) I stopped by The Apple Shed which is where we used to get apples and stuff when I was a kid. See in Jersey? The *coughs* Garden State *coughs*, we paid 70 bucks for three pumpkins last year that were all under 20 pounds. I got 4 pumpkins (all 21 to 26 pounds), 5 1/2 pecks of apples, a gallon of cider, and 4 packs of maple candy (with 4 pieces each in them) all for about 40 bucks.
So I needed to do something with the apples since we're not gonna eat all of them. Today with
eaglesis40 visiting, we decided to bake! I got some recipes from the web and also from
angelskuuipo and we got to work. :-)
So these are the fruits (haha) of our labors.
Recipes from

Walnut-apple snack cake
2/3 cup butter, softened
1 3/4 cups packed brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1 1/4 cups chopped peeled tart apples
1/3 cup English toffee bits or almond brickle chips
1/3 cup chopped walnuts
Vanilla ice cream, optional
1. In a large bowl, cream butter and brown sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla.
2. Combine the flour, baking powder, cinnamon, salt and nutmeg; gradually add to creamed mixture and mix well. Fold in the apples, toffee bits and walnuts.
3. Transfer to a greased 13 x9-in baking dish. Bake at 350F for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Cut into squares. Serve with ice cream if desired.
Yield: 18 servings
I couldn't find toffee chips anywhere so we substituted caramel. In addition not everyone in my family likes walnuts so I made one pan without it. So we split it into two pans for baking.

Caramel Apple Muffins
2 cups all-purpose flour
3/4 cup sugar
2 teaspoons baking powder
2 1/2 teaspoons ground cinnamon
1/2 teaspoon salt
1 egg
1 cup 2% milk
1/4 cup butter, melted
2 teaspoons vanilla extract
1/2 cup chopped peeled tart apple
12 caramel, chopped
Topping:
1/2 cup packed brown sugar
1/4 cup quick-cook oats
3 tablespoons butter, melted
1 teaspoon ground cinnamon
1. In a large bowl, combine the flour, sugar, baking powder, cinnamon and salt. In another bowl, whisk the egg, milk, butter and vanilla. Stir into dry ingredients just until moistened. Fold in apple and caramels.
2. Fill paper-lined muffin cups three-fourths full. Combine topping ingredients; sprinkle over batter.
3. Bake at 350F for 20-25 minutes or until a toothpick inserted in the cake portion comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.
Yield: 14 muffins.

APPLE WRAPS
4-6 cooking apples
1/3 cup white sugar
1/2 teaspoon cinnamon
3/4 cup water
2 sheets of puff pastry (approximately a4 size)
Thaw out pastry while preparing apple.
Peel and chop apples to usual stewing size. Place apple, cinnamon and sugar into medium saucepan and cover with water.
Cook on stove for approximately 10 minutes; take off the heat and strain excess juice into a bowl (for a tasty glaze).
Cut each sheet of pastry into 4 squares. Place a large spoonful of apple onto each square. Take one corner of pastry and pinch it together with the diagonal corner.
Repeat with opposite corners. Make sure pastry is pressed together firmly - puff pastry has a tendency to pull apart while baking.
Glaze with remaining apple juice.
Cook for approximately 15 minutes on 360°F (180°C) or until golden. Great with ice cream or by itself.

We used pie crust and it just didn't want to brown.

Apple Pie
Ingredients
• 6 cups thinly sliced apples
• 3/4 cup white sugar
• 1 tablespoon butter
• 1 teaspoon ground cinnamon
• 1 recipe pastry for a 9 inch single crust pie
Directions
1. Prepare your pastry for a two crust pie. Wipe, quarter, core, peel, and slice apples; measure to 6 cups.
2. Combine sugar and cinnamon. The amount of sugar used depends on how tart your apples are.
3. Arrange apples in layers in pastry lined pie plate. Sprinkle each layer with sugar and cinnamon. Dot top layer with small pieces of butter or margarine. Cover with top crust.
4. Place on lowest rack in oven preheated to 450 degrees F (230 degrees C). Bake for 10 minutes, then reduce oven temperature to 350 degrees F (175 degrees C). Bake for 30 to 35 minutes longer. Serve warm or cold.

Apple Crisp
4 medium tart cooking apples, sliced (4 cups)
3/4 cup packed brown sugar
1/2 cup Gold Medal® all-purpose flour
1/2 cup quick-cooking or old-fashioned oats
1/3 cup butter or margarine, softened
3/4 teaspoon ground cinnamon
3/4 teaspoon ground nutmeg
Cream or Ice cream, if desired
1. Heat oven to 375ºF. Grease bottom and sides of 8-inch square pan with shortening.
2. Spread apples in pan. In medium bowl, stir remaining ingredients except cream until well mixed; sprinkle over apples.
3. Bake about 30 minutes or until topping is golden brown and apples are tender when pierced with a fork. Serve warm with cream.
I pretty much tripled the recipe so keep that in mind when you see this...
