Cheesy Chicken and Rice

Cheesy Chicken and Rice
If you have any questions, please let me know. I’m still not sure about writing these up.
Ingredients
1 can Campbell’s Cheddar Cheese soup
About half of 1 can (14 ½ oz) chicken broth (I used low sodium)
2 boneless chicken breasts—if breasts are thicker, filet them (slice them in half to make thinner)
3 garlic cloves
Approximately 2 tablespoons canola oil
Rice
Directions
**I used already made rice that had been frozen and needed to be partially defrosted so I spooned about half the broth into the rice to wet it down while defrosting it. I did not make any measurements with the broth so that is all estimated.
1. Put oil into frying pan, but do not turn on yet
2. Thinly slice garlic cloves and toss onto oil, turn on stove and sauté for a few moments before layering chicken over top
3. Cook chicken until almost cooked through and lightly browned
4. While chicken is cooking mix cheddar cheese soup and broth together until well mixed
5. Gently pour soup mixture over chicken in pan and bring to a slow boil
6. Reduce to a simmer and cover, let cook for about 10 minutes, stirring occasionally
7. Serve over rice with a vegetable

9/5/11 16:33 (UTC)Hell, my family loves garlic. Last night we were laden with garlic, then I went to go see my friend and when I left and was driving home I was all "OH CRAP! I stink!" So I texted her and apologized for the stench and she told me neither her nor her husband could smell it and that they are huge consumers of garlic anyway! LOL!
